Baked Almond Butter, Banana and Whey Bars
Makes 6 servings

INGREDIENTS
100 g Rolled oats (Dry weight.)
4 tbsp (60 g) Almond butter
1 large, about 55 g Egg
1 medium, about 100 g Banana (Peeled weight. A medium banana is about 100 g without the skin.)
1 scoop, about 30 g Whey protein isolate (Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.)
1 tsp Ground cinnamon
Half a teaspoon Baking powder
A pinch Salt

METHOD
1. Heat the oven to 180°C and line a 450 g loaf tin with baking paper.
2. Mash the banana, then beat in the egg and almond butter until smooth.
3. Stir in the oats, whey, cinnamon, baking powder and salt. Press into the tin and bake for eighteen minutes until golden at the edges and firm in the middle.
4. Cool completely in the tin before cutting into six.

Contains gluten cereals, milk, eggs and tree nuts.
Oats count as a gluten cereal under UK labelling and ordinary oats are milled alongside wheat. Certified gluten-free oats are a separate ingredient here.
Most whey powders contain soya lecithin, which counts as soya. Check the tub.

RECIPE NOTES
Almond butter is the fat and about a third of the calories. Peanut butter swaps in at almost the same figures.
These are softer than a shop bar and keep for four days in the fridge. They also freeze, wrapped individually.
