Apple Slices with Goat's Cheese, Honey and Thyme
Makes 1 serving

INGREDIENTS
1 medium, about 160 g Apple
30 g Soft goat's cheese
A small teaspoon (5 g) Honey
A few leaves Fresh thyme
A grind Black pepper

METHOD
1. Cut the apple into eight wedges and cut out the core from each.
2. Take the goat's cheese out of the fridge ten minutes early so it spreads. Press a teaspoon of it onto the flat cut side of each wedge with the back of the spoon.
3. Set the wedges on a plate cheese side up, drizzle the honey across them in one pass, then scatter the thyme and a grind of pepper.

Contains milk.

RECIPE NOTES
Soft goat's cheese is 280 kcal per 100 g, so 30 g is 84 kcal. It tastes strong enough that 30 g across eight wedges is not mean.
A sharp apple stands up to the cheese better than a sweet one. Granny Smith is the obvious choice.
