Apple and Raisin Baked Oat Squares with Egg
Makes 6 servings

INGREDIENTS
120 g Gluten-free oats (Dry weight. Certified, which is the only thing that separates them from ordinary oats in the numbers.)
1 medium, about 160 g Apple (Grated with the skin on, core discarded. Do not squeeze it; the juice is the liquid here.)
2 large, about 110 g Egg
30 g Raisins
80 ml Water
1 tsp Ground cinnamon
1 tsp Baking powder
A pinch Salt

METHOD
1. Heat the oven to 180°C and line a 20 cm square tin with baking paper.
2. Whisk the eggs with the water, then stir in the grated apple, raisins and cinnamon.
3. Add the oats, baking powder and salt and stir well. Tip into the tin, level the top and bake for twenty-five minutes until firm and lightly browned.
4. Cool for fifteen minutes before cutting into six.

Contains eggs.

RECIPE NOTES
No sugar and no syrup. The apple and raisins carry the sweetness, and it is a plainer square for it, the kind that wants a cup of tea.
Water instead of milk keeps dairy out and costs a little protein. Soya milk in its place would put some of that back.
