Baked Banana and Whey Oat Squares
Makes 6 servings

INGREDIENTS
120 g Rolled oats (Dry weight.)
2 medium, about 200 g Banana (Peeled weight. A medium banana is about 100 g without the skin.)
2 large, about 110 g Egg
100 ml Skimmed milk
1 scoop, about 30 g Whey protein isolate (Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.)
1 tsp Baking powder
1 tsp Ground cinnamon
A pinch Salt

METHOD
1. Heat the oven to 180°C and line a 20 cm square tin or a small roasting tray with baking paper.
2. Mash the bananas well, then beat in the eggs and milk.
3. Stir in the oats, whey, baking powder, cinnamon and salt. Pour into the tin and bake for twenty-five minutes until the top is golden and a knife comes out clean.
4. Cool for ten minutes before cutting into six squares.

Contains gluten cereals, milk and eggs.
Oats count as a gluten cereal under UK labelling and ordinary oats are milled alongside wheat. Certified gluten-free oats are a separate ingredient here.
Most whey powders contain soya lecithin, which counts as soya. Check the tub.

RECIPE NOTES
Ripe bananas are the sweetness; there is no sugar in this. Spotty ones are noticeably sweeter than yellow ones.
The whey roughly doubles the protein of a plain baked oat. Leaving it out makes a slightly softer square with the same carbohydrate.
