Spiced Beef and Black Bean Tacos
Makes 1 serving

INGREDIENTS
130 g Beef mince, 5% fat (Weighed raw. Standard 20% mince is nearly twice the calories at the same weight.)
80 g Black beans, tinned and drained (Drained weight.)
2 small, about 60 g Corn tortilla
20 g Reduced-fat cheddar
40 g Greek yogurt, 0% fat
40 g Lettuce
60 g Tomato
1 tbsp (15 g) Tomato purée
1 tsp Ground cumin
1 tsp Chilli powder
A pinch Dried oregano
A squeeze Lime juice

METHOD
1. Fry the mince in a dry non-stick pan over a high heat until browned, breaking it up. Add the cumin, chilli powder and oregano and stir for a minute.
2. Add the tomato purée, beans and 100 ml of water. Simmer for eight minutes until the liquid has gone and the mince is coated.
3. Stir the lime juice into the yogurt. Warm the tortillas in a dry pan.
4. Fill the tortillas with the mince, shredded lettuce, chopped tomato, grated cheese and the lime yogurt.

Contains milk.
Some corn tortillas are blended with wheat flour. Check the packet.

RECIPE NOTES
Packet taco seasoning is mostly salt and cornflour. The three spices here do the same job and cost nothing in calories.
Two tortillas is a snug dinner. A third adds 65 kcal and there is enough filling for it.
