Boiled Egg and Hummus Pitta Pocket
Makes 1 serving

INGREDIENTS
1 pitta, about 60 g Wholemeal pitta
2 large (110 g) Egg
40 g Hummus (Shop-bought. Reduced-fat versions are nearer 200 kcal.)
50 g Cucumber
60 g Tomato
A good pinch Za'atar
A squeeze Lemon juice

METHOD
1. Lower the eggs into boiling water for seven minutes, then cool them under the tap and peel.
2. Toast the pitta until it puffs, then cut across the top and open the pocket.
3. Spread the hummus inside, slide in the sliced eggs, cucumber and tomato, and finish with the za'atar and lemon.

Contains gluten cereals, eggs and sesame.

RECIPE NOTES
Seven minutes gives a yolk that is just set and still soft in the centre. It holds together in a pocket where a six-minute egg leaks.
Hummus is 17 g of fat per 100 g, so 40 g is weighed rather than scooped. It is the second biggest share of the 18 g of fat, after the yolks.
