Buckwheat Pancakes with Cinnamon Apple and Yogurt
Makes 1 serving

INGREDIENTS
60 g Buckwheat flour
1 large (55 g) Egg
100 ml Semi-skimmed milk
Half a teaspoon Baking powder
1 medium, about 160 g Apple
Half a teaspoon Ground cinnamon
100 g Greek yogurt, 0% fat
1 tsp, about 7 g Maple syrup
1 tsp, about 4 g Coconut oil

METHOD
1. Whisk the flour, baking powder, egg and milk to a smooth batter and let it stand for ten minutes.
2. Dice the apple, skin on, and cook it in a dry pan with the cinnamon and a splash of water for five minutes until soft at the edges.
3. Cook the pancakes in the coconut oil over medium heat, about two minutes a side, until the surface is dry and the underside is dark.
4. Stack with the yogurt, the apple and the maple syrup.

Contains milk and eggs.

RECIPE NOTES
Buckwheat is not wheat despite the name, and the pancakes are gluten-free if the flour is milled somewhere that keeps it that way. Check the bag.
Rest the batter. Buckwheat drinks up the milk slowly and an unrested batter makes pancakes that crack.
