Carrot, Raisin and Walnut Oat Balls
Makes 6 servings

INGREDIENTS
60 g Carrot (Grated finely and squeezed dry in kitchen paper. Wet carrot makes a ball that will not hold.)
70 g Rolled oats (Dry weight.)
40 g Raisins
30 g Walnuts
3 dates, about 60 g Medjool dates (Stoned weight.)
1 tsp Ground cinnamon
A pinch Salt

METHOD
1. Grate the carrot on the fine side of the grater, wrap it in kitchen paper and squeeze hard until no more liquid comes out.
2. Blitz the pitted dates and walnuts together until the walnuts are crumbs and the dates have gone to paste.
3. Add the carrot, oats, raisins, cinnamon and salt and pulse until the mix clumps. Roll into six and chill for an hour, which these need longer than most to set.

Contains gluten cereals and tree nuts.
Oats count as a gluten cereal under UK labelling and ordinary oats are milled alongside wheat. Certified gluten-free oats are a separate ingredient here.

RECIPE NOTES
Raisins and dates between them are the sweetness; there is no syrup. The walnuts are most of the fat.
These are wetter than a date-only ball and do not keep as long. Four days in the fridge is about the limit.
