Chicken and Hummus Bagel Thin with Sun-Dried Tomato
Makes 1 serving

INGREDIENTS
1 thin, about 45 g Bagel thin
110 g Chicken breast (From a roast, or poached for twelve minutes the night before and sliced cold. Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.)
30 g Hummus (Two level teaspoons' worth. Hummus is 17% fat and the pot spoon is generous. Shop-bought. Reduced-fat versions are nearer 200 kcal.)
20 g Sun-dried tomatoes in oil, drained (Drained and patted with kitchen paper. The oil they sit in is where the calories are.)
15 g Rocket
To taste Black pepper

METHOD
1. Toast the bagel thin lightly so it holds up to the hummus.
2. Spread the hummus on both halves. Chop the sun-dried tomatoes roughly and scatter them over the bottom half.
3. Layer the chicken and rocket on, grind over pepper and close it.

Contains gluten cereals and sesame.

RECIPE NOTES
A bagel thin is 45 g where a proper bagel is nearer 90 g, and it is the only reason a bagel appears in a lunch at 363 kcal.
Poach the chicken in barely simmering water rather than a rolling boil. Boiled hard, breast goes stringy; poached, it slices cleanly.
