Chocolate Baked Oats with Egg and a Peanut Butter Middle
Makes 1 serving

INGREDIENTS
40 g Rolled oats (Dry weight.)
2 tsp (6 g) Cocoa powder
1 large, about 55 g Egg
1 medium, mashed (100 g) Banana (Peeled weight. A medium banana is about 100 g without the skin.)
1 tbsp (15 g) Peanut butter (The kind that is peanuts and salt. Sweetened spreads carry more carbohydrate.)
50 ml Unsweetened almond milk
Half a teaspoon Baking powder
To taste Granulated sweetener

METHOD
1. Heat the oven to 180°C. Mash the banana and beat in the egg and the almond milk.
2. Stir in the oats, cocoa, baking powder and sweetener.
3. Spoon half the batter into a small ovenproof dish, put the peanut butter in the middle in one blob, and cover it with the rest of the batter.
4. Bake for 18 to 20 minutes until the top is set. Wait five minutes before breaking in.

Contains gluten cereals, eggs, peanuts and tree nuts.
Oats count as a gluten cereal under UK labelling and ordinary oats are milled alongside wheat. Certified gluten-free oats are a separate ingredient here.

RECIPE NOTES
The peanut butter sinks a little and stays molten while the oats set round it. Straight out of the oven it runs; five minutes later it holds.
Banana is the only sweetness apart from the sweetener. A very ripe one, brown-spotted, makes the sweetener unnecessary.
