Cottage Cheese with Orange and Toasted Pumpkin Seeds
Makes 1 serving

INGREDIENTS
130 g Cottage cheese
1 medium, about 130 g Orange (Peeled weight.)
10 g Pumpkin seeds
A pinch Ground cinnamon
A pinch Salt

METHOD
1. Toast the pumpkin seeds in a dry pan over medium heat with a pinch of salt for two to three minutes, until they swell and a few start to pop. Tip them out.
2. Peel the orange and cut it across into rounds, then cut each round into quarters, catching the juice on the board.
3. Spoon the cottage cheese into a bowl, tip the orange and its juice over, dust with cinnamon and scatter the warm seeds on top.

Contains milk.

RECIPE NOTES
Pumpkin seeds are 30% protein by weight and the 10 g here carries 3 g of it. They are also 560 kcal per 100 g, so it is 10 g and not a handful.
Cutting the orange into rounds rather than segments is quicker and leaves the membranes in, which most people do not mind in a bowl with cottage cheese.
