Rice Cakes with Cream Cheese, Strawberries and Balsamic
Makes 1 serving

INGREDIENTS
2 cakes, about 18 g Rice cakes
40 g Light cream cheese
80 g Strawberries
5 g Balsamic glaze (Glaze rather than vinegar because it sits on the fruit instead of soaking into the rice cake.)
A grind Black pepper

METHOD
1. Hull the strawberries and slice them lengthways into thin ovals.
2. Spread the cream cheese thickly over both rice cakes right up to the edge, so the fruit has something to hold onto.
3. Overlap the strawberry slices across the top, dot the balsamic glaze over in the smallest drops you can manage and finish with pepper. Eat within a few minutes, before the rice cake softens.

Contains milk and sulphites.

RECIPE NOTES
Rice cakes go soggy the moment cream cheese meets them. Build these right before eating, not in the morning for later.
Strawberries and balsamic is an old Italian pairing. The pepper is part of it, not a garnish.
