Dark Chocolate Dipped Clementine Segments
Makes 1 serving

INGREDIENTS
2 clementines, about 120 g Clementine (Peeled and pulled apart, with as much of the white pith picked off as patience allows. Peeled weight.)
3 squares, about 15 g Dark chocolate, 85%
A few flakes Salt

METHOD
1. Peel the clementines, separate the segments and lay them on kitchen paper for a few minutes so the surface is dry.
2. Melt the chocolate in twenty-second bursts in the microwave, stirring between each.
3. Dip each segment halfway, set it on baking paper, add a flake of salt to each and chill for ten minutes until the chocolate is firm.

Contains soya.
Flagged for the soya lecithin most bars use. Most also say they may contain milk and nuts.

RECIPE NOTES
Three squares of chocolate over twenty or so segments is a thin coat. Most of what is on the plate is fruit, and the figure says so.
Orange segments work the same way and are bigger. Tinned mandarins do not; they are too wet and the chocolate will not stick.
