Edamame Smash on Rice Cakes
Makes 1 serving

INGREDIENTS
100 g Edamame beans, shelled (Shelled weight. In the pod, about half of what you weigh is pod.)
1 tsp (4 g) Olive oil
2 cakes, about 18 g Rice cakes
A good squeeze Lemon juice
A few leaves Fresh mint
A pinch Chilli flakes
A pinch Salt

METHOD
1. Boil the beans for four minutes until tender, then drain them well.
2. Crush them with a fork, or pulse briefly, with the oil, lemon, mint and salt into a rough paste that still has whole beans in it.
3. Pile onto the rice cakes and finish with the chilli flakes.

Contains soya.

RECIPE NOTES
Smashed rather than blended, so it stays a topping instead of a dip and holds on the rice cake.
Peas work in place of edamame, with about half the protein.
