Egg White Frittata with Smoked Turkey and Roasted Peppers
Makes 1 serving

INGREDIENTS
6 whites, about 198 g Egg white
1 large, about 55 g Egg (One yolk in six whites is enough to stop it tasting of hospital.)
60 g Smoked turkey breast, sliced (Torn into strips. Deli weight, as sold.)
80 g Roasted red peppers from a jar, drained (Patted dry. Straight from the jar they leak brine into the egg.)
50 g Spinach
30 g Light mozzarella
4 sprays Olive oil spray (Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.)
A pinch Dried oregano
To taste Black pepper

METHOD
1. Heat the grill. Spray a small ovenproof pan, wilt the spinach over a medium heat and add the sliced peppers and turkey for a minute to warm through.
2. Whisk the whites and the egg with oregano and pepper, pour over the filling and cook for three minutes without stirring until the base is set.
3. Tear the mozzarella over and grill for two minutes until the top is set and the cheese has melted.

Contains milk and eggs.
Jarred peppers in brine often list sulphites.

RECIPE NOTES
Deli turkey and jarred peppers make this a five-ingredient assembly, and 50 g of protein for 338 kcal is what it delivers.
Whites set faster than whole eggs and turn springy if overcooked. Two minutes under the grill is plenty; look for set, not brown.
