Espresso Skyr with Dark Chocolate
Makes 1 serving

INGREDIENTS
170 g Skyr
1 shot, about 30 g Espresso (One shot, cooled. Hot coffee thins the skyr and never thickens back.)
1 tsp, about 3 g Cocoa powder
1 square, about 5 g Dark chocolate, 85%
To taste Granulated sweetener

METHOD
1. Make the espresso and leave it to cool for a few minutes. Stir the cocoa and sweetener into it to make a thin paste.
2. Beat the coffee paste into the skyr a spoon at a time so it stays thick, then spoon into a small glass.
3. Grate the chocolate over the top with a fine grater and chill for ten minutes if you can wait.

Contains milk and soya.
Flagged for the soya lecithin most bars use. Most also say they may contain milk and nuts.

RECIPE NOTES
One square of chocolate grated goes a long way. Chopped, the same 5 g looks like almost nothing.
A splash of strong cold brew works in place of the espresso and is usually to hand.
