Gluten-Free French Toast with Strawberries and Skyr
Makes 1 serving

INGREDIENTS
2 slices, about 70 g Gluten-free bread
1 large (55 g) Egg
1 white, about 33 g Egg white
30 ml Skimmed milk
A pinch Ground cinnamon
120 g Skyr
100 g Strawberries
1 tsp, about 7 g Maple syrup
4 sprays, about 1 g Olive oil spray (Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.)

METHOD
1. Whisk the egg, egg white, milk and cinnamon in a shallow dish.
2. Dip the bread for twenty seconds a side. Gluten-free bread is drier than wheat bread and soaks fast.
3. Fry in a sprayed pan over medium heat for two to three minutes a side until browned.
4. Top with the skyr, sliced strawberries and the syrup.

Contains milk and eggs.
Many gluten-free loaves contain egg. Check the bag.

RECIPE NOTES
Gluten-free bread crisps better than it toasts, so it makes surprisingly good French toast. It also browns fast, so keep the heat at medium and watch it.
Skyr is the protein here. The bread is 4 g per 100 g against 9.5 g for wholemeal, so without the skyr this is a low-protein plate.
