Grated Apple Porridge with Skyr
Makes 1 serving

INGREDIENTS
45 g Gluten-free oats (Dry weight. Certified, which is the only thing that separates them from ordinary oats in the numbers.)
About 300 ml Water
100 g, about two-thirds of one, grated Apple
Half a teaspoon Ground cinnamon
150 g Skyr
10 g Walnuts
A pinch Salt

METHOD
1. Grate the apple coarsely with the skin on.
2. Put the oats, apple, cinnamon, salt and water in a pan and simmer for five to six minutes, stirring, until the apple has gone soft and the oats are thick.
3. Spoon into a bowl, put the skyr on top straight from the fridge, and crumble the walnuts over.

Contains milk and tree nuts.

RECIPE NOTES
Cooking the apple into the oats rather than adding it after is what makes the bowl taste of apple all the way through. The skin goes soft and disappears.
Cold skyr on hot porridge is the point. It melts at the edges and stays thick in the middle, so each spoon is a bit of both.
