Greek Chicken Burgers with Tzatziki, No Bun
Makes 1 serving

INGREDIENTS
160 g Chicken breast mince (Weighed raw.)
20 g Feta (Crumbled into the mince. Twenty grams salts and moistens the whole patty; more makes it fall apart.)
30 g Red onion
A teaspoon Dried oregano
1 clove, about 3 g Garlic
A little Lemon zest
4 sprays, about 1 g Olive oil spray (Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.)
40 g Tzatziki
120 g Tomato
80 g Cucumber
A few leaves Fresh mint
Plenty Black pepper

METHOD
1. Mix the mince with the feta, finely chopped onion, oregano, garlic, zest and pepper, and shape into two patties about 2 cm thick. Chill for ten minutes.
2. Spray a griddle or frying pan, heat it well, and cook the patties for five minutes a side until marked and firm with no pink at the centre.
3. Chop the tomato and cucumber with the mint and a pinch of salt.
4. Serve the patties on the salad with the tzatziki spooned over.

Contains milk.

RECIPE NOTES
No egg needed. The feta and the moisture in the onion hold the patties together as long as they are chilled before they meet the pan.
A pitta alongside adds 150 kcal and a gluten flag. As written the plate has neither.
