Grilled Dates with Goat's Cheese
Makes 1 serving

INGREDIENTS
2 dates, about 40 g Medjool dates (Stoned weight.)
25 g Soft goat's cheese
A few leaves Fresh thyme
A grind Black pepper

METHOD
1. Heat the grill to high. Slit the dates, take out the stones and open them up like a book.
2. Divide the goat's cheese between them, pressing it into the cavity, and scatter the thyme leaves and pepper over.
3. Set them cheese-side up on a small tray under the grill for three to four minutes until the cheese browns in patches and the dates start to caramelise at the edges. Leave a minute before eating; the sugar is very hot.

Contains milk.

RECIPE NOTES
Goat's cheese is the fat and the protein and the salt. The dates are the sugar. Neither is much on its own and together they are a snack that tastes of far more than two ingredients.
Feta works in the same weight and is saltier. Ricotta is milder and lower, and does not brown the same way.
