Grilled Halloumi and Olive Skewers
Makes 1 serving

INGREDIENTS
50 g Halloumi
6 olives, about 24 g Olives, pitted
80 g Cherry tomatoes
3 sprays Olive oil spray (Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.)
A pinch Dried oregano
A squeeze Lemon juice

METHOD
1. Soak two wooden skewers in water for ten minutes, or use metal ones. Heat the grill to high.
2. Cut the halloumi into 1.5 cm cubes and thread it onto the skewers alternately with the olives and tomatoes.
3. Spray, scatter with oregano and grill for three minutes a side, until the halloumi is golden and the tomatoes blister.
4. Squeeze lemon over and eat hot.

Contains milk.

RECIPE NOTES
Halloumi is 320 kcal per 100 g, so 50 g is the portion and two skewers is what it makes. It stays chewy once cool and eats well cold from a tub.
Unsoaked wooden skewers scorch under the grill within a minute.
