Griddled Halloumi with Watermelon and Mint
Makes 1 serving

INGREDIENTS
80 g Halloumi (Four slices about a centimetre thick.)
200 g Watermelon (Flesh only.)
100 g Cucumber
40 g Rocket
10 g Pumpkin seeds
5 g Olive oil
Juice of half a lime Lime juice
A handful, torn Fresh mint
A good grind Black pepper

METHOD
1. Get a dry griddle pan or frying pan properly hot and cook the halloumi slices for two minutes a side, until striped and soft in the middle.
2. While it cooks, cut the watermelon into chunks, the cucumber into half moons, and toast the seeds in a small dry pan until they start to pop.
3. Whisk the lime, oil and pepper together and toss the rocket, watermelon and cucumber in it.
4. Lay the halloumi over while it is still warm and scatter the mint and seeds on top.

Contains milk.

RECIPE NOTES
Halloumi is 25% fat and salty enough that no salt goes anywhere else on the plate. Most of the 31 g of fat is the cheese.
Eat it while the halloumi is warm. Cold halloumi squeaks.
