Jammy Eggs with Sesame and Tamari
Makes 1 serving

INGREDIENTS
2 large, about 110 g Egg
1 tsp (5 g) Tamari
1 tsp (4 g) Sesame seeds
10 g Spring onion
A pinch Chilli flakes

METHOD
1. Lower the eggs into a pan of boiling water and cook for six and a half minutes, then lift them into cold water for two minutes.
2. While they cool, toast the sesame seeds in a dry pan for a minute until they start to pop, and slice the spring onion finely.
3. Peel the eggs, halve them and lay them cut side up. Spoon the tamari over, then the seeds, spring onion and chilli flakes.

Contains eggs, soya and sesame.

RECIPE NOTES
Six and a half minutes from a rolling boil gives a set white and a yolk that holds its shape but is still soft in the middle. Eggs straight from the fridge need thirty seconds more.
Tamari rather than soy sauce keeps wheat out. Ordinary soy sauce is brewed with it.
