Mango and Coconut Pea Protein Overnight Oats
Makes 1 serving

INGREDIENTS
45 g Gluten-free oats (Dry weight. Certified, which is the only thing that separates them from ordinary oats in the numbers.)
200 ml Coconut milk drink (The carton drink at 33 kcal per 100 ml, not tinned coconut milk. Tinned is roughly five times the calories.)
10 g Chia seeds
Half a scoop (15 g) Pea protein powder
8 g Desiccated coconut
100 g, diced Mango (Flesh only.)
A squeeze Lime juice

METHOD
1. Whisk the pea protein into the coconut drink in a jar with a fork until there are no lumps.
2. Stir in the oats, chia and desiccated coconut, put the lid on and leave in the fridge overnight.
3. In the morning, stir, loosen with a little water if it has set solid, and top with the mango and a squeeze of lime.

Check ingredient packaging for allergen information.
Coconut is not a tree nut under UK labelling.

RECIPE NOTES
No dairy, no egg, no nuts and no gluten flag, which makes it the jar in this collection with nothing on the allergen line. The coconut drink is the carton kind at 33 kcal per 100 ml.
Chia and oats together drink a lot of liquid. If it is solid in the morning, a splash of water brings it back.
