Mediterranean Chicken
Makes 1 serving

INGREDIENTS
280 g Chicken breast (Weighed raw. Weighed after cooking, the same fillet carries about 87 g of protein and would put this dish nearer 680 kcal, which is the single most common way a chicken recipe ends up with numbers that do not add up.)
120 g Sweet potato
75 g Peppers
85 g Broccoli
39 g Onions
50 g Tomato sauce
4 Olives
3 sprays Olive oil spray
To taste Basil, salt, pepper

METHOD
1. Roast or pan-sear the chicken with the olive oil spray until golden and cooked through, then rest it.
2. Roast the sweet potato until tender at the edges.
3. Cook the onions and peppers in the same pan until softened and lightly coloured, add the tomato sauce and let it reduce slightly.
4. Steam the broccoli until just tender.
5. Plate everything together, scatter the olives over the top and finish with torn basil.

Check ingredient packaging for allergen information.

RECIPE NOTES
Cook it once and it feeds twice: 165 g of the chicken and sauce goes into the chicken wrap, which is a 340 kcal snack rather than a second cook.
Eight grams of fat across a whole plate is the olives, the sauce and three sprays of oil. Pouring rather than spraying roughly doubles it.
