Melon with Feta and Mint
Makes 1 serving

INGREDIENTS
200 g Cantaloupe melon (Flesh only.)
40 g Feta (Feta is 270 kcal per 100 g and salty enough that 40 g seasons twice its weight in melon.)
A few leaves, torn Fresh mint
A squeeze Lime juice
A grind Black pepper

METHOD
1. Cut the melon from the skin and into chunks about the size of a walnut. Chill them if the melon was not already in the fridge; this dish depends on being cold.
2. Arrange the melon on a plate and crumble the feta over it with your fingers so there are big and small pieces.
3. Squeeze the lime over, tear the mint on top and finish with a grind of pepper.

Contains milk.

RECIPE NOTES
A ripe cantaloupe smells sweet at the stalk end and gives slightly at the other. An unripe one tastes of cucumber and the feta cannot save it.
Watermelon at the same weight is the same calories and works in summer. It needs the pepper even more.
