Melon with Ham and Black Pepper
Makes 1 serving

INGREDIENTS
200 g Cantaloupe melon (Flesh only.)
60 g Lean ham, sliced (Ordinary lean sliced ham. Parma ham is the classic and is about twice the calories per gram, so weigh it if you swap. Cooked deli weight, as sold.)
A squeeze Lime juice
A generous grind Black pepper
A few leaves, optional Fresh mint

METHOD
1. Cut the melon from its skin and into long wedges about two fingers wide. Cold from the fridge is essential.
2. Tear each ham slice in half lengthways and wrap a strip around the middle of each wedge, leaving the ends of the melon showing.
3. Lay the wrapped wedges on a plate, squeeze the lime over, grind on plenty of pepper and add the mint.

Check ingredient packaging for allergen information.

RECIPE NOTES
Sixty grams of lean ham brings 11 g of protein for 63 kcal, so this plate lands where it does. The melon is 60 kcal for 200 g.
The pepper is not a garnish. Melon and ham without it is sweet and salty; with it, it is a dish.
