Minted Edamame Mash on Corn Cakes with Feta
Makes 1 serving

INGREDIENTS
100 g Edamame beans, shelled (Shelled weight. In the pod, about half of what you weigh is pod.)
A few leaves, chopped Fresh mint
A squeeze Lemon juice
1 tsp (5 g) Olive oil
2 cakes, about 18 g Corn cakes
15 g Feta
To taste Black pepper
A pinch Salt

METHOD
1. Boil the edamame for four minutes so it is soft enough to crush, then drain.
2. Crush with a fork or a potato masher with the oil, lemon, mint and salt. Keep it rough.
3. Pile onto the corn cakes, crumble the feta over and add pepper.

Contains milk and soya.

RECIPE NOTES
Crushed, not puréed. A blender makes it into baby food; a fork leaves it as a topping.
Fifteen grams of feta is a small amount and is doing a lot. Forty would nearly double the fat on the plate.
