Peanut Butter Stuffed Dates with Dark Chocolate
Makes 1 serving

INGREDIENTS
2 dates, about 40 g Medjool dates (Stoned weight.)
1 tbsp (15 g) Peanut butter (The kind that is peanuts and salt. Sweetened spreads carry more carbohydrate.)
2 squares, about 10 g Dark chocolate, 85%
A few flakes Salt

METHOD
1. Slit the dates, remove the stones and fill each with half the peanut butter, pressing it in with a teaspoon.
2. Melt the two squares of chocolate in a small bowl in the microwave, ten seconds at a time, stirring between each.
3. Dip the top of each date in the chocolate, or spoon it over, set them on baking paper with a flake of salt each, and freeze for fifteen minutes until the chocolate is hard.

Contains peanuts and soya.
Flagged for the soya lecithin most bars use. Most also say they may contain milk and nuts.

RECIPE NOTES
Between the dates, the peanut butter and the chocolate, this is the densest of the stuffed dates on the site. Three of them would be a meal's worth of sugar.
Straight from the freezer the date is chewy and the chocolate snaps. Left out for ten minutes it is softer and, some would say, better.
