Sliced Pear with Tahini and Cinnamon
Makes 1 serving

INGREDIENTS
1 medium, about 170 g Pear
1 tbsp (15 g) Tahini (Weigh it. Tahini is 90 kcal a tablespoon and a heaped spoon is nearer 25 g.)
A squeeze Lemon juice
A pinch Ground cinnamon
A pinch Salt

METHOD
1. Stir the tahini in a small bowl with the lemon juice and a pinch of salt. It will seize and thicken at first; add cold water half a teaspoon at a time until it loosens to the texture of thick cream.
2. Quarter the pear, cut out the core and slice each quarter in two lengthways.
3. Fan the wedges on a plate, dust them with cinnamon and put the tahini alongside for dipping.

Contains sesame.

RECIPE NOTES
Tahini seizing when lemon goes in is normal. Keep stirring and adding water and it comes back smooth.
A firm pear is better here than a soft one. Soft pears collapse against the dip.
