Quark with Orange and Pistachios
Makes 1 serving

INGREDIENTS
150 g Quark
1 medium, about 130 g Orange (Peeled weight.)
10 g Pistachios, shelled (Shelled weight. In the shell, about half is shell.)
1 tsp, about 7 g Honey
A few drops Vanilla extract

METHOD
1. Cut the top and bottom off the orange, stand it up and slice the peel and pith away in strips down the sides. Then cut between the membranes to release the segments over a bowl, catching the juice.
2. Squeeze what is left of the orange over the quark, add the vanilla and honey and beat it smooth.
3. Spoon the quark into a bowl, arrange the segments over it and chop the pistachios roughly on top.

Contains milk and tree nuts.

RECIPE NOTES
Segmenting takes three minutes and is the difference between a pot you want to eat and a pot with cold orange lumps in it.
A blood orange in season makes this look remarkable for no change to the numbers.
