Rice Cakes with Smoked Mackerel and Nori
Makes 1 serving

INGREDIENTS
2 cakes, about 18 g Rice cakes
40 g Smoked mackerel (About half a small fillet, skin removed. As sold. Most of the fat in any dish it is in.)
1 sheet, about 3 g Nori sheets
50 g Cucumber
A squeeze Lemon juice
To taste Black pepper

METHOD
1. Hold the nori sheet over a gas flame with tongs, or press it into a hot dry pan, for ten seconds a side until it crisps and smells toasted. Crumble it.
2. Peel the skin off the mackerel and flake the flesh.
3. Slice the cucumber thin and lay it on the rice cakes, then the mackerel, then the nori, lemon and pepper.

Contains fish.

RECIPE NOTES
Smoked mackerel is 300 kcal per 100 g and most of that is fat. Forty grams is enough for two cakes and is 10 g of the 11 g of fat here.
Toasting the nori turns it from chewy to crisp. Ten seconds is enough and twenty is too many.
