Satay Chicken Bites
Makes 1 serving

INGREDIENTS
110 g Chicken breast (Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.)
1 heaped tsp (12 g) Peanut butter (The kind that is peanuts and salt. Sweetened spreads carry more carbohydrate.)
Half a tablespoon (8 g) Tamari
60 g Cucumber
A good squeeze Lime juice
A pinch Chilli flakes
A splash, just boiled Water
4 sprays Olive oil spray (Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.)

METHOD
1. Cut the chicken into 2 cm pieces. Spray a hot pan and cook them for about six minutes, turning, until golden and no longer pink in the middle.
2. Meanwhile whisk the peanut butter, tamari, lime and chilli flakes with a splash of hot water until it is pourable.
3. Toss the chicken through the sauce, or keep it as a dip, and eat with the cucumber cut into batons.

Contains peanuts and soya.

RECIPE NOTES
Peanut butter is 600 kcal per 100 g. The 12 g here is one honest teaspoon and a third of the calories. Thinning it with water rather than more peanut butter is how the sauce goes round.
Tamari keeps wheat out. If that does not matter to you, soy sauce is the same.
