Savoury Cottage Cheese Pancakes with Smoked Salmon
Makes 1 serving

INGREDIENTS
150 g Cottage cheese
2 large (110 g) Egg
30 g Rolled oats (Dry weight.)
30 g Spring onion
50 g Smoked salmon (As sold.)
3 sprays, about 0.75 g Olive oil spray (Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.)
A squeeze Lemon juice
Plenty Black pepper
A little Fresh dill

METHOD
1. Blend the cottage cheese, eggs and oats to a loose batter, then stir in the chopped spring onion and a lot of black pepper.
2. Cook three or four small pancakes in a sprayed pan over medium heat, two to three minutes a side. They are soft in the middle and need a confident flip.
3. Stack them, drape the salmon over and finish with the lemon and dill.

Contains gluten cereals, milk, eggs and fish.
Oats count as a gluten cereal under UK labelling and ordinary oats are milled alongside wheat. Certified gluten-free oats are a separate ingredient here.

RECIPE NOTES
Cottage cheese pancakes are closer to a soft fritter than a fluffy stack. Small ones flip; big ones fold.
The salmon on top is what makes it 46 g. Without it, the pancakes still carry a decent protein figure on their own from the cottage cheese and eggs.
