Smoked Salmon and Avocado Rolls
Makes 1 serving

INGREDIENTS
70 g Smoked salmon (As sold.)
50 g Avocado (Flesh only. Half a medium avocado is about 70 g.)
10 g Spring onion
A good squeeze Lime juice
A little, finely chopped Fresh red chilli
A few leaves Fresh coriander
A pinch Salt

METHOD
1. Mash the avocado with the lime, chilli and a pinch of salt until it spreads.
2. Lay the salmon slices flat, spread the avocado thinly over each and scatter the sliced spring onion and coriander along one edge.
3. Roll up from that edge, press the seam down and cut each roll into three.

Contains fish.

RECIPE NOTES
Avocado stands in for cream cheese, so the rolls have nothing from milk. It is a little higher in calories, and 50 g is about a third of a fruit.
The lime keeps the avocado green for a few hours. Made the night before, expect it to have browned at the edges.
