Smoked Salmon and Cottage Cheese Corn Cakes
Makes 1 serving

INGREDIENTS
2 cakes, about 18 g Corn cakes
80 g Cottage cheese
40 g Smoked salmon (As sold.)
A teaspoon Capers
A few fronds Fresh dill
A little, grated Lemon zest
To taste Black pepper

METHOD
1. Spread the cottage cheese thickly over both corn cakes, right to the edges.
2. Tear the salmon into pieces and lay it over, then scatter the capers, dill and lemon zest on top with plenty of pepper.
3. Eat straight away, before the cakes soften.

Contains milk and fish.

RECIPE NOTES
Cottage cheese instead of cream cheese doubles the protein of the spread and halves the calories, and the curds give it some texture under the salmon.
Corn cakes are slightly sweeter than rice cakes and stand up a bit better to a wet topping. Either works.
