Smoked Salmon and Cucumber Rolls
Makes 1 serving

INGREDIENTS
80 g Smoked salmon (As sold.)
30 g Light cream cheese
100 g Cucumber
A few fronds Fresh dill
A squeeze Lemon juice
To taste Black pepper

METHOD
1. Shave the cucumber into long thin ribbons with a peeler, stopping at the seedy core, and lay them on kitchen paper for a couple of minutes.
2. Lay the salmon slices out flat and spread each thinly with cream cheese. Add a ribbon or two of cucumber, a little dill, lemon and pepper.
3. Roll up tightly from the short end and cut each roll in half.

Contains milk and fish.

RECIPE NOTES
Light cream cheese at 30 g is 47 kcal. The full-fat kind is nearly double for the same spread.
Patting the cucumber dry keeps the rolls from sliding apart. They hold in the fridge for a few hours wrapped tightly.
