Spiced Beef Mince over Hummus and Chopped Salad
Makes 1 serving

INGREDIENTS
150 g Beef mince, 5% fat (Weighed raw. Standard 20% mince is nearly twice the calories at the same weight.)
50 g Hummus (Shop-bought. Reduced-fat versions are nearer 200 kcal.)
100 g Cucumber
120 g Tomato
30 g Red onion
80 g Little gem lettuce
10 g Pine nuts
5 g Olive oil
Juice of half a lemon Lemon juice
A teaspoon Ground cumin
A pinch Ground cinnamon
A handful, chopped Fresh parsley

METHOD
1. Brown the mince in a hot dry pan, breaking it up with a spoon, for six to eight minutes until the edges crisp and any liquid has gone.
2. Add the cumin, cinnamon, salt and pine nuts for the last minute, stirring so the nuts toast without burning.
3. Chop the cucumber, tomato, onion and lettuce small and dress them with the oil, lemon and a pinch of salt.
4. Spread the hummus across the plate, pile the salad on one side, spoon the hot beef over and scatter the parsley.

Contains sesame.
Pine nuts are seeds and are not on the UK list of tree nuts, though people with nut allergies are often told to avoid them.

RECIPE NOTES
Cinnamon in beef reads as Lebanese rather than as pudding. A pinch, enough to notice and not enough to name.
The mince is 5% fat. Ten per cent at the same weight adds about 70 kcal and leaves the pan greasy.
