Spiced Hot Cocoa with Pea Protein
Makes 1 serving

INGREDIENTS
1 scoop, about 30 g Pea protein powder
3 tsp, about 9 g Cocoa powder
250 ml Oat milk
1 tsp, about 7 g Maple syrup
Half a teaspoon Ground cinnamon
A small pinch Cayenne pepper
A tiny pinch Salt

METHOD
1. Whisk the cocoa, cinnamon, cayenne and salt into a paste with a splash of the oat milk in the bottom of a pan.
2. Add the rest of the oat milk and the maple syrup and warm gently, whisking, until steaming. Do not boil.
3. Take the pan off the heat, add the pea protein and whisk for a good thirty seconds until there are no lumps. Pour into a mug.

Contains gluten cereals.
Oat drinks count as a gluten cereal under UK labelling unless made from certified gluten-free oats.

RECIPE NOTES
Pea protein is more forgiving of heat than whey and does not curdle, but it does clump. Whisking it into a paste before topping up is the fix if it fights you.
Oat milk is the sweetest of the plant milks and carries most of the carbohydrate here. Made on soya milk it is lower and higher in protein, and less sweet.
