Tempeh and Green Bean Stir-Fry with Tamari and Ginger
Makes 1 serving

INGREDIENTS
130 g Tempeh, sliced 1 cm thick
150 g Green beans
80 g Red pepper
4 tsp (20 g) Tamari
A thumb, in matchsticks Fresh ginger
2 cloves, about 6 g Garlic
One, sliced Fresh red chilli
1 tsp Rice vinegar
8 g Rapeseed oil
1 tsp (5 g) Sesame seeds

METHOD
1. Fry the tempeh slices in the oil over a medium-high heat for three minutes a side until golden. Lift them out.
2. Turn the heat up, add the beans and pepper and stir-fry for four minutes until the beans blister in places.
3. Add the ginger, garlic and chilli for thirty seconds, then the tamari and vinegar with a splash of water.
4. Return the tempeh, toss for a minute, and finish with the sesame seeds.

Contains soya and sesame.

RECIPE NOTES
Without rice this sits at 429 kcal. Add 150 g of cooked rice and it is about 620, so the decision is worth making on purpose.
Tempeh does not need pressing the way tofu does. It goes straight from the packet to the pan and browns in the oil.
