Tofu, Cocoa and Banana Shake
Makes 1 serving

INGREDIENTS
100 g Firm tofu (Drained and pressed for a few minutes between kitchen paper. Silken tofu blends smoother but is not in the table; firm works with a longer blend. Weighed after pressing. Silken tofu is about half the calories and protein.)
3 tsp, about 9 g Cocoa powder
80 g (a small one) Banana (Peeled weight. A medium banana is about 100 g without the skin.)
150 ml Unsweetened soya milk
1 tsp, about 7 g Maple syrup
A handful Ice

METHOD
1. Crumble the tofu into the blender with the soya milk and blend for a minute until it is completely smooth, scraping down the sides once.
2. Add the banana, cocoa, maple syrup and ice and blend again for thirty seconds.
3. Taste. Tofu is bland, so it will taste of banana and cocoa; add a pinch of salt if it seems flat.

Contains soya.

RECIPE NOTES
Tofu and soya milk together get to a protein figure most plant shakes only reach with powder. The tofu also makes it thick, closer to a mousse than a drink.
The banana is most of the carbohydrate and the maple syrup is one teaspoon. Both can go without touching the protein.
