Turkey Mince Tortillas with Salsa
Makes 1 serving

INGREDIENTS
200 g Turkey mince (Lean mince, around 5% fat. Standard 7% mince adds roughly 60 kcal and takes the fat closer to 24 g.)
2 medium Flour tortillas
100 g Peppers
79 g Cherry tomatoes
70 g Onion
30 g Tabasco
10 g Balsamic reduction
3 sprays Olive oil spray

METHOD
1. Dice half the onion and pepper finely with the cherry tomatoes for the salsa, toss with the Tabasco and balsamic reduction, and leave it to sit while you cook.
2. Spray a hot pan with olive oil and sweat the remaining onion and pepper until softened and lightly coloured.
3. Add the turkey mince, break it up well, and cook over high heat until browned and cooked through, seasoning as it goes.
4. Warm the tortillas briefly in a dry pan, fill them with the turkey, and spoon the salsa over the top.

Contains gluten cereals and sulphites.

RECIPE NOTES
Letting the salsa sit while the turkey cooks is the whole trick. The balsamic draws liquid out of the tomatoes and the Tabasco stops it being sweet.
The two tortillas carry about 50 g of the 64 g of carbohydrate. One tortilla, eaten open, makes this a different dish entirely.
