Ingredients
- Beef mince, 5% fat350 g
Weighed raw. Standard 20% mince is nearly twice the calories at the same weight.
- Cooked lentils250 g
A tin of green lentils, drained. Cooked weight, green or brown. A pouch is already this.
- Celeriac500 g
Peeled weight.
- Potato200 g
Peeled weight. A little potato stops the celeriac mash going watery. Raw, peeled weight.
- Onion200 g
- Carrot200 g
- Beef stock400 g
Made up from a cube or a pot.
- Tomato purée2 tbsp (30 g)
- Olive oil1 tbsp, about 11 g
- Fresh thymeA few sprigs
- Bay leaf1 leaf
- SaltTo taste
Method
Boil the celeriac and potato in chunks for twenty minutes until both are soft. Drain very well, steam dry for two minutes, then mash with salt, pepper and a splash of the stock.
Soften the chopped onion and carrot in the oil for ten minutes. Add the mince and fry hard until browned.
Stir in the tomato purée, thyme, bay and stock. Simmer for twenty minutes, then stir in the lentils and season.
Spread the filling in a dish, top with the mash and bake at 200°C for twenty-five minutes until the top colours.
Worth knowing
- Makes four. Celeriac mash is about half the calories of potato mash before butter, and the potato in it is there for texture rather than bulk.
- The lentils take the mince further at almost the same calories. What they change is the fibre and the cost, not the flavour.
