Ingredients
- CauliflowerOne head, about 500 g
- Cannellini beans, tinned and drainedMost of a tin, drained (200 g)

- Semi-skimmed milk250 g
- Cornflour15 g
Thickens the sauce with no butter and keeps it gluten-free.
- Reduced-fat cheddar50 g
- Dijon mustard1 tsp (6 g)
- Mustard powderHalf a tsp
- Black pepperPlenty
Method
Boil the cauliflower florets and sliced leek in salted water for five minutes until just tender, drain well and tip into a baking dish with the beans.
Whisk the cornflour into a splash of the cold milk, then heat with the rest of the milk, stirring, until it thickens. Off the heat stir in most of the cheese, both mustards, salt and pepper.
Pour the sauce over, top with the last of the cheese and bake at 200°C for 20 minutes until bubbling and browned.
Worth knowing
- The beans are why this is a dinner and not a side. They also hold the sauce, so the dish reheats without splitting.
- Reduced-fat cheddar at 50 g does the job here because the mustard is carrying the flavour. Full-fat at the same weight is about 40 kcal more a serving.
