Ingredients
- Chicken thigh, skinless and boneless400 g
Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.
- New potatoes400 g
Halved so they cook through in the sauce. Raw weight, skins on.
- Chopped tomatoes, tinned400 g

About eight. They are 12% fat, so the handful is not nothing.

Method
Season the thighs and brown them in the oil in a wide pan over a high heat, three minutes a side, then lift them out.
Soften the sliced onion and pepper in the same pan for five minutes, add the garlic and rosemary, then pour in the wine and let it bubble down by half.
Add the tomatoes, potatoes and olives, return the chicken, cover and simmer for thirty-five minutes until a knife slides into a potato with no resistance.
Uncover for the last ten minutes so the sauce thickens, and check the seasoning before serving.
Worth knowing
- Thighs rather than breast because forty minutes in a sauce dries breast out. Skinless thigh is 4 g of fat per 100 g, which is close enough to breast that the trade costs almost nothing.
- No gluten and no dairy in the pan. The wine is 40 kcal a serving before it reduces and can be swapped for stock.
