Ingredients
- Lean beef, trimmed, in 3 cm chunks500 g
Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.
- Red kidney beans, tinned and drained320 g
Drained weight of two standard tins, give or take. Drained weight.
- Chopped tomatoes, tinned800 g

- Chipotle paste4 tsp (24 g)
Smoky and medium hot. Start with half if you are unsure.
- Beef stock300 g
Made up from a cube or a pot.
- Olive oil1 tbsp, about 11 g
- Garlic3 cloves, about 9 g
- Ground cumin2 tsp
- Dried oregano1 tsp
- SaltTo taste
Method
Brown the beef in the oil in a large pot over a high heat in two batches, so it colours rather than steams. Set it aside.
Soften the chopped onion in the same pot for eight minutes. Add the garlic, cumin, oregano and chipotle and stir for a minute.
Return the beef with the tomatoes and stock. Bring to a simmer, cover and cook on the lowest heat for two hours, or in a 150°C oven, until the beef shreds with a fork.
Stir in the beans and cook uncovered for fifteen minutes to thicken. Season and serve.
Worth knowing
- Makes four. The figures are for a quarter of the pot with nothing alongside. A 150 g portion of cooked rice adds 195 kcal; three corn tortillas add 200.
- Chunks of trimmed beef give a chilli with proper texture and no fat to skim. Mince at 20% fat in its place would add about 150 kcal a serving.
