  • Hazelnuts50 g
  • Medjool dates6 dates, about 120 g

    Stoned weight.

  • Cocoa powder3 tsp, about 9 g
  • Rolled oats40 g

    Dry weight.

Method

  1. Toast the hazelnuts in a dry pan over a medium heat for five minutes, shaking often, until the skins split and they smell roasted. Tip into a tea towel and rub off most of the skins.

  2. Blitz the hazelnuts to coarse crumbs, then add the pitted dates, cocoa, oats and salt and pulse until the mix clumps around the blade.

  3. Roll into six balls, pressing hard so they hold, and chill for half an hour.

Worth knowing

  • Toasting is not optional. Raw hazelnuts taste of very little and the skins are bitter; five minutes in a pan changes both.
  • Hazelnuts are the fat and the dates are the sugar. Halving the hazelnuts and doubling the oats gives a drier, plainer ball with fewer calories, but less of the point.
