  • Lean ham, sliced60 g

    Cooked deli weight, as sold.

Method

  1. Heat the grill. Beat the eggs with pepper and a pinch of salt.

  2. Spray a small ovenproof frying pan, add the peas and spring onion and cook for two minutes, then scatter the ham, torn, over.

  3. Pour in the eggs and cook over a medium heat for three minutes until the edges are set and the middle is still loose.

  4. Grate the cheddar over and put the pan under the grill for two minutes, until the top is set and the cheese is bubbling.

Worth knowing

  • Finished under the grill rather than folded, so the middle sets without the base burning.
  • Cheddar at 25 g is 103 kcal, a quarter of the plate. It is worth it here; the reduced-fat kind does not brown under a grill.
