Ingredients

  • Seitan, in chunks150 g

    Seitan is wheat gluten. It is the one protein here that is nothing but the allergen.

  • Potato, in 2 cm chunks120 g

    Raw, peeled weight.

  • Onion80 g
  • Garlic2 cloves, about 6 g
  • Fresh gingerA thumb, grated
  • Curry powder1 tbsp
  • Fresh thymeA few sprigs
  • Fresh red chilliOne, left whole
  • Reduced-fat coconut milk, tinned100 g
  • Vegetable stock200 ml

    Made up from a cube or a pot.

  • Spring onion20 g
  • Rapeseed oil5 g

Method

  1. Brown the seitan in the oil over a high heat for three minutes and set aside.

  2. Cook the onion in the same pan for five minutes, then add the garlic, ginger and curry powder and stir for a minute until the spice darkens.

  3. Add the potato, stock, coconut milk, thyme and the whole chilli. Simmer with the lid on for twenty minutes until the potato is soft.

  4. Return the seitan for five minutes, crush a few potato chunks against the side of the pan to thicken it, and finish with the spring onion.

Worth knowing

  • The chilli goes in whole so it flavours the pot without making it fierce. Burst it with a spoon at the end if you want the heat.
  • Seitan is a 37 g protein line on its own here, so a potato curry with no meat still comes in at 43 g.
