  • Egg10 large, about 550 g
  • Bacon medallions100 g

    Weighed raw. Back bacon with the fat on is about double.

  • Sweetcorn, tinned and drained100 g

    Drained weight.

  • Red pepper80 g
  • Spring onion30 g
  • Cheddar40 g
  • Olive oil spray12 sprays, for the tin

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

  • Smoked paprikaHalf a teaspoon
  • Black pepperTo taste

Method

  1. Heat the oven to 180°C and oil a twelve-hole muffin tin. Grill or dry-fry the bacon until crisp, then cool and snip it into small pieces.

  2. Divide the bacon, sweetcorn, diced pepper, spring onion and cheese between the holes.

  3. Beat the eggs with the smoked paprika and black pepper and pour over the fillings.

  4. Bake for eighteen to twenty minutes until the tops are golden and firm. Leave to cool for five minutes before turning out.

Worth knowing

  • Makes twelve, two per serving, six servings. They reheat from the fridge in thirty seconds and travel well in a lunchbox.
  • Medallions rather than back bacon is the choice that matters. Back bacon with the fat on roughly doubles the bacon's contribution to the 199 kcal.
